Alluvional, free draining, silty loams (Cabernet Franc). Cabernet Sauvignon and Carignan on sandier soils.

Management

Cabernet Franc planted around 1890. Cabernet Sauvignon and Carignan from 100 and 60 year- old vineyards respectively. All vineyards are ungrafted, cane pruned and unirrigated. Yields around 20 hl/ha.

By hand, during April. Grapes sorted at the winery.

Fermentation

In stainless steel tanks, at 28°C.

Maceration

At 24°C, 24 days (Cabernet franc)

Barrel ageing

17 months in new French oak barrels. Selection of the best barrels of the vintage.

Unfined, unfiltered
